World Tripe Day

The 24th day of October is celebrated as World Tripe Day. For anyone who doesn’t know what tripe is, let us give them a quick explanation. Tripe is the edible lining of the stomachs of cows, hogs, or sheep that requires long periods of cooking to become edible.

In the U.S., the lining of the beef stomach is the most common form of tripe, and it’s often used to make dishes such as Vietnamese Pho Soup, Mexican Menudo Soup, Spanish Stew Callos, and Trippa Alla Romana (Italian tripe dish with grated Parmesan and tomato sauce). Although not everyone will find tripe palatable, for many people, it is considered the best comfort food.

The History of World Tripe Day

Many people are probably wondering who would invent a holiday that celebrates tripe in all its forms. We have a simple answer to that question. World Tripe Day was created in 2013 by the Tripe Marketing Board. This website takes a humorous look at tripe and advocates on its behalf. It even has some tripe recipes that people can enjoy.

A Tasty Menudo Soup Recipe

Okay, we decided that the best way to talk about this holiday was to share one of our favorite tripe recipes. This recipe is for Menudo, and we think most people will find it an interesting and quite tasty dish. Below is the recipe.

Ingredients:

  • Two pounds of tripe.
  • One liter of water.
  • One whole white onion.
  • Four cloves of garlic.
  • One branch of rosemary.
  • One branch of oregano.
  • Guajillo sauce.
  • One can of beef stock.
  • One can of hominy.
  • Two teaspoons of salt.
  • Two potatoes (cut into cubes).
  • Cilantro (for serving).
  • Lime (for serving).

Instructions:

  • Clean the tripe with water and vinegar, then rinse well.
  • Trim the fat off the tripe.
  • Cut the tripe into small chunks. Cook for 25 minutes in boiling water.
  • Drain the water from the tripe, and then rinse again.
  • In a clean pot, add water, garlic, onions, salt, herbs, potatoes, beef stock, and tripe.
  • Bring to a boil. Cook for 20 minutes.
  • Add guajillo sauce and hominy to the pot and cook for an additional 10 minutes.
  • Serve with lime and cilantro.

Well, most people will want to talk to their local butcher to find fresh tripe, but if that’s not possible, then many grocery stores sell canned tripe. And, of course, tripe can be bought off the internet.
